10 things to know about PDT

Hot dogs are a speciality at PDT

1. This is the second branch of PDT, which originally opened in New York City’s East Village in May of 2007.
2. Signature design elements of the original bar – the phone booth entrance, décor and building materials have been rejigged for Hong Kong by local designer Nelson Chow.
3. Like New York, tables (for parties of six or less) are available by reservation and bar seats (for parties of three or less) are filled on a first come, first served basis.
4. Culinary Director Richard Ekkebus is behind the food menu, which features dishes from New York including the John John Deragon and Caviar Tots with new offerings, such as the Honkie Dog and Takoyaki Tots.
5. After four years in New York City, bartender Adam Schmidt was tapped to be head bartender in Hong Kong. His menu will feature New York signatures like the Benton’s Old Fashioned and Mezcal Mule alongside his own creations, such as the Bad Hunter and Big Fan.
6. The floor and reservations will be overseen by Malaika Suarez, who spent five years at PDT in New York before taking over management responsibilities of the new bar.
7. The PDT Hong Kong menu, which will be updated seasonally, features cocktails of all styles and from all bases – vodka, gin, rum, tequila, brandy and whisky – along with a more concise selection of wine, beer and non-alcoholic options.
8. The bartenders are happy to prepare classic cocktails or come up with something new if requested.
9. PDT is outfitted with a state of the art Amadeus sound system and acoustic baffling that facilitates high fidelity audio playback and intimate conversation.
10. A reserve list of the hotel’s fine wines and rare spirits will be available, and features a handful of high-end cocktails served in Baccarat crystal.
